BANANA CAKE with CREAM CHEESE FROSTING

Thank you Paula Deen!!!!!!  How four overripe, black, icky looking bananas can taste this good, is beyond me, but she sure makes it work.  I always seem to buy too many bananas and end up with a few that the kids don’t eat.  I was sick to death of banana bread, so found this recipe.  Thank you again, Paula.  You are the woman!!!!!

 

Sir together in mixing bowl:

3 cups all purpose flour              1 tsp cinnamon

2 cups sugar                             ½ tsp salt

1 tsp baking soda

 

Add until moist but DO NOT BEAT:

3 beaten large eggs                 ¾ cup cooking oil

 

Stir in:

4 mashed ripe bananas           1 cup chopped pecans

1 ½ tsp vanilla

 

Bake in 3 buttered and floured round cake pans at 350 for 23-28 minutes.  Cool in pans for 10 minutes and then completely on racks. 

 

FROSTING

 

Blend 8oz cream cheese and ½ cup butter

Add 1 lb powdered sugar beat until fluffy then,

Add 1 tsp vanilla and ½ cup chopped pecans

    I did make this a couple of weeks ago-everyone loved it. Chip usually scrapes the frosting off his cakes but not this frosting…there’s hope for that boy yet… Shoy

    Hard to find a better frosting than cream cheese.
