Very Yummy Shortbread

Over the Top Shortbread

Shortbread

   1 stick cold butter cut into pieces

   1 cup flour

   1/3 cup sugar

   1/4 tsp salt

Place all ingredients in food processor and pulse until it looks like peas.  Press mixture in the bottom of a 9X9 buttered and floured pan and bake for 20 min at 350.

Caramel Layer

   1 can sweetened condensed milk

   1 Tbsp butter

Combine ingredients in heavy bottomed pan and cook over medium low heat.  Bring to boil slowly and cook until mixture becomes thick and amber in color, or about 15 min.  Pour over shortbread, smooth out and let cool until room temperature.

Chocolate Topping

   about 1 cup semi sweet chocolate chips

Melt chips in double boiler and pour over caramel layer.  Cool and cut into squares.

This is really easy….if you have the patience to cook the caramel the right length of time.  As you can see, I didn’t cook it long enough.  It would have been the right color if I had cooked it another minute or two.  Sure did taste yummy though.
