The Storm Missed Us

It was chilly and damp here today, but snow only on the grass and the windshield.  Suppose to be up in the 70’s by Monday.  Hooooorrrrraaaaay!!  Boy, this dessert made the house smell wonderful.  And it is so easy.  Next time I think I will make smaller personal sized ones.

RUSTIC APPLE PIE

1 single pie crust either boughten or homemade

1 egg white

3/4 cup sugar

2 Tbsp corn starch

2 tsp cinnamon

4 cups peeled and thinly sliced grannie smith apples

Roll crust into 12 inch circle and place on foil lined cookie sheet or pizza pan/  Brush crust with 1/2 of egg white.  Combine sugar, cinnamon, and cornstarch.  Add slices apples.  The place mixture in center of crust,  Fold and pleat crust up and around filling, leaving an opening in the center.  Brush crust with the remaining egg white and bake at 425 for 20-25 minutes.  Let cool before cutting.

This turned out really well, although a bit smaller that a regular pie.  It is rich and gooey.  It only took 2 normal sized apples to make.  I did apparently put a hole in the crust because alot of the good juice seeped out.  When the “pie” was finished baking, I put it on a plate and spooned the juice over the fruit.  And this is all that’s left.
